Preheat the oven to 450º F. Line a sheet pan with parchment paper and place the premade (or homemade!) pizza dough on the sheet pan. Use a brush to coat the surface of the dough with olive oil. Fold the dough in half and brush olive oil over the top of the dough. Then flip the dough over and brush olive oil over the top.
Sprinkle the top with flaky sea salt and minced fresh rosemary and thyme.
Bake the folded pizza dough for 15-20 minutes, until the dough is golden brown and puffy.
You can keep the half moon dough sandwich whole if you like, since I am making this for two, I am going to cut the half moon in half and make one at a time.
Crumple each prosciutto slice and lay them as the first layer of the sandwich. Then shingle alternating rows of tomato and mozzarella slices.
Drizzle with more olive oil. You can sprinkle on flaky sea salt, pepper and more herbs if you like. Then top with basil leaves. If you want, drizzle on some balsamic glaze!
Fold the top over and voila!
